Flora

In the park of Vaeshartelt

Vaeshartelt Park is a green oasis full of trees, flowers, and aquatic plants. From colorful flowerbeds to old trees and wild plants along the pond, something beautiful grows everywhere. Together with the vegetable garden and orchards, this forms a lively piece of nature to discover and enjoy.

The authentic avenue structure and the majestic trees...”

..give the estate its iconic appearance.

Special trees

Vaeshartelt houses an impressive collection of unique monumental trees from all over the world—planted in the 18th century.

Living history
Some of these trees have stood here for over a hundred years. They have seen generations of people come and go and are part of the story of the estate. Therefore, these trees are carefully managed and protected so that future generations can enjoy them as well.

Look up at the trunk, the branches, and the canopy – you are looking at a piece of living history.

A selection from the collection:

  • Sequoia giganteum from California – 35 meters tall – 150-200 years old (to be found in our courtyard)
  • Red Beech – 150-200 years old (can be found by our pond, you can't miss it!)
  • Magnolias and tulip trees
  • Italian poplars, weeping beeches, horse chestnuts
  • Various spruces and pine trees

Sinus mowing

A technique called sinusoidal mowing is employed on the estate. Sinusoidal mowing, or meandering mowing, is an ecological mowing method in which grasslands and verges are mowed in meandering paths instead of straight strips. By mowing in phases and only partially (approximately 40% remains), variable grass heights are created, which significantly stimulates biodiversity, butterflies, bees, and birds.

Did you know that as many as 5 to 6 types of grass grow here?

So, what might look a bit wild is actually deliberate nature management.

Star Forest

The Sterrenbos is a special place on the estate where paths converge in a star shape. This type of forest structure was often created at historic estates.

From the center, multiple avenues radiate outwards, like the points of a star. In this way, long sightlines were created through the landscape.

In the past, visitors could survey various directions simultaneously from the center. It was a place to walk, look, and enjoy the landscape.

Walk to the center and discover how the paths diverge like rays.

Right into the heart of the Star Forest

Pinetum

In the late 19th century, the Vaeshartelt landscape park was planted by landscape architect Gindra. In the northeast corner of the park, Gindra created a Pinetum featuring various types of evergreens and conifers originally from other parts of the world. This likely stemmed from scientific curiosity regarding which trees would survive in this climate, as well as from a desire for status and aesthetics.

Discover the vegetable garden and orchards of Vaeshartelt

High-stem fruit, low fruit, herbs, and flowers, all organically grown for our restaurant.
This way, we keep it local, sustainable, and flavorful.

Orchard

At the Vaeshartelt orchard, Rafael grows high -stem fruit : juicy apples, pears, and plums – with attention to taste, biodiversity, and balance.

These trees grow in a natural, diverse environment full of birds, insects, herbs, and blossoms. Not a monoculture, but a place where everything works together and reinforces each other.

The fruits are not always perfect in shape – but they are full of flavor, nutrition, and a story. Rafael works with natural cultivation methods and lets nature do its work as much as possible.

Daniël tends the dwarf fruit with great care ; the bushes full of raspberries, blackberries, and currants.

The harvest goes to local enthusiasts and processors – but sometimes also straight into the mouths of curious passers-by. Because let's be honest: picking a fresh, warm raspberry is pure summer.

Curious about what is growing, blooming, or ripening? Feel free to take a stroll among the trees and taste the seasons.

Kitchen garden

Welcome to Frank 's fields!

In the organic vegetable garden, herbs and vegetables grow that end up directly in our kitchen. A place where sustainability and taste come together.

No artificial measures, but rest, compost, crop rotation, and living soil. This keeps the land healthy – for now and for the future.

Frank believes that agriculture is about connection: between people and landscape, taste and seasons. That is why he enjoys working with colleagues and residents of the estate.

Come see how healthy food grows slowly here – in the open ground, under the sun, and with respect for all living things.

Vineyard

In this beautiful hidden corner of the estate, something special grows: grapes for our own sparkling rosé wine. With great care, we are cultivating a small-scale vineyard here where everything revolves around taste and balance. The freshness of the fruit, the fine fizz, the soft color: everything comes together in a wine that captures the estate in a bottle.

Our sparkling rosé is not a mass-produced product, but an artisanal wine that lets you taste the season.

Oyster mushrooms

Jetse cultivates fresh mushrooms with care and wonder in the large containers and in the cool, dark cellars of the estate.

What grows here?
Oyster mushrooms, shiitakes, and other flavorful varieties – all grown sustainably, often using residual streams from the local area. Good for people and soil.

The container is being adapted step by step for cultivation, with respect for the unique building. Everything is done in consultation with professionals.

Mushrooms are more than just tasty: they build healthy ecosystems and give waste material a new life. A silent revolution, deep underground.
